Ingredients
    For the crust
  • 1 ½ cups Graham cracker crumbs

  • 6 tablespoons Unsalted butter, melted
  • 2 tablespoons C&H® Light Brown Sugar
  • pinch Salt 

    For the bars
  • 1 small Fresh dragon fruit, peeled and chopped in small cubes

  • ¼ cup C&H® Granulated Sugar
  • 12 ounces Cream cheese, at room temperature
  • 1 ½ cups C&H® Powdered Sugar
  • 2 teaspoons Pure vanilla extract
  • 1 cup Plain Greek yogurt, full fat at room temperature
  • ½ cup Heavy whipping cream, cold

Step 1

Line one 8x8-inch baking pan with parchment paper. Leave a 2-inch overhang of paper on both sides for easy lifting of the bars. In a medium bowl, mix all the ingredients for the crust until well combined. Pour the mixture into the prepared pan and press down into an even layer. Place in the freezer. 

Step 2

In a small saucepan, over medium heat, cook the dragon fruit and the sugar until the sugar is completely dissolved, the dragon fruit has become soft, and the mixture has reduced in size. About 10-12 minutes. Remove from heat and cool completely. Stir the mixture occasionally as it cooks. 

Step 3

In a large bowl, beat the cream cheese until soft. Add the sugar and mix until fluffy. Scrape the sides of the bowl. Add vanilla and yogurt. Beat until combined. 

Step 4

In a separate bowl, beat the cream until stiff peaks. Fold the cream into the cream cheese mixture. Pour half of the mixture into the prepared crust. Add 5 tablespoons of dragon fruit mixture to the rest of the cream cheese batter. Mix until well combined. Pour over the plain cream cheese mixture. Place in the refrigerator to set for at least 6 hours or overnight. Cut into 16 bars and serve immediately.

Additional Tips

Bars also taste delicious if placed in the freezer and enjoyed as a frozen treat.
