1 cup Unsalted butter
- 1 1/4 cup C&H® Dark Brown Sugar
- 1 large Egg, room temperature
- 1 large Egg yolk, room temperature
- 1 Tbsp. Whole milk
- 2 tsp. Vanilla extract
- 2 cups Old fashioned oats
- 1 2/3 cups All purpose flour, spooned and leveled
- 2 tsp. cornstarch
- 1 tsp. Baking soda
- 1 tsp. Kosher salt
- pinch Ground cinnamon
- 1/4 cup Ground flaxseed (optional)
- 1 cup Mix ins: dried cranberries, nuts, pepitas, dark chocolate.

Instructions
Step 1
Make the brown butter. Cut butter into tablespoon pieces, place in a stainless steel skillet and melt over medium heat. Use a heat resistant spatula to stir the butter, you’ll begin to see tiny specks at the bottom of the pan, stir so they don’t stick. As soon as the butter turns a chestnut brown and omits a nutty aroma, remove the pan from heat, pour the butter into a heat proof bowl and add 1 ice cube. Place in the fridge to solidify, this will take 1-2 hours.
Step 2
Preheat the oven to 350°F. Line 2 baking sheets with parchment paper and set aside
Step 3
Whisk together the dry ingredients: the oats, flour, cornstarch, baking soda, salt, and cinnamon. (And flaxseed, if using).
Step 4
Cream the solidified brown butter and C&H® Dark Brown Sugar using the paddle attachment on a stand mixer for 2-3 minutes. Then add in the egg, egg yolk, vanilla and milk. Mix again.
Step 5
Gradually add in the dry ingredients just until combined.
Step 6
Stir in any mix-ins.
Step 7
Scoop into 1-2 Tbsp. sized cookie dough balls, and bake for 7-9 minutes or until the edges set. (Careful not to over bake) Cool on the cookie sheet for just 2-3 minutes, then transfer to a wire cooling rack. Enjoy!
