Ingredients
    Cinnamon Roll Filling
  • 1/4 cup C&H® Light Brown Sugar

  • ¼ cup Unsalted butter, at room temperature
  • 1 teaspoon Cinnamon

    Cookie Dough
  • ½ cup Unsalted butter, room temperature

  • 1 + ¼ cup (for rolling) C&H® Granulated Sugar Easy Baking Tub
  • 1 Large egg
  • 1 tablespoon Vanilla extract
  • 2 cups All purpose flour
  • ½ teaspoon Baking soda
  • ½ teaspoon Baking powder
  • ½ teaspoon Salt
  • 1¼ cup C&H® Granulated Sugar Easy Baking Tub
  • 1 teaspoon Cinnamon

    Vanilla Glaze
  • 1 cupC&H® Powdered Sugar

  • 2 tablespoons Milk
  • 1 teaspoon Vanilla extract

Cinnamon Roll Filling

Step 1

In a small bowl, make the cinnamon roll filling by mixing togther granulated sugar, butter and cinnamon.

 

Cookie Dough

Step 2

In the bowl of an electric mixer fitted with the paddle attachment, cream together butter and 1 cup granulated sugar until light and fluffy, about 2 minutes. Scrape down the sides of the bowl. Add the egg and vanilla and mix until well combined.
 

Step 3

In a mixing bowl, whisk together flour, baking soda, baking powder and salt. Add the dry ingredients to the butter mixture and mix on low just until dough is combined.
 

Step 4

Divide cookie dough in half removing half from the bowl and setting aside. Blend cinnamon roll filling into half of the dough until well combined.
 

Step 5

In a small bowl mix together ¼ cup granulated sugar and 1 teaspoon cinnamon with a fork. 


 

Step 6

Scoop out 1 ounce portions of both the plain cookie dough and the cinnamon cookie dough using a small spoon or cookie scoop and roll together to swirl the doughs and create a ball. Drop cookie dough balls in the cinnamon sugar before placing on a parchment lined baking sheet to chill for 30 minutes while oven preheats. 


 

Step 7

Preheat oven to 350 degrees. Place dough balls on a new parchment lined cookie sheet 3 inches apart and bake for 12 minutes or until the edges are just set.
 

Step 8

Remove cookies from the oven and allow to cool 10 minutes on the cookie sheet before transferring to a cooling rack to cool completely before glazing.

 

Vanilla Glaze

Step 9

In a small bowl, mix together powdered sugar, milk and vanilla extract. Drizzle glaze over cooled cookies. Allow glaze to harden before storing cookies.
