Ingredients
  • 1 1/2 cups packed C&H® Light Brown Sugar

  • 1 cup fresh or canned pumpkin
  • 2/3 cup vegetable oil
  • 2 eggs
  • 1/4 cup water
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon cloves
  • ½ teaspoon baking powder

Yields: 1 loaf

Preheat oven to 350°F. Grease a 9x5x3-inch loaf pan.

In a large bowl, combine sugar, pumpkin, oil, eggs and water and beat on medium speed for 1 minute. Combine flour, baking soda, salt and spices and sift into pumpkin mixture. Beat on low speed for 30 seconds or just until smooth.

Scrape into loaf pan and bake 55 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 -15 minutes then remove from pan.
