Ingredients
    For the candy
  • 1 tablespoon Unsalted butter, softened, for greasing sheet pan

  • 48 individual Saltine crackers 
  • 1 cup (2 sticks) Unsalted butter 
  • 1 cup C&H® Light Brown Sugar, packed

    For the chocolate topping
  • 2 cups Semi-sweet chocolate chips

    For the toppings (optional)
  • ½ cup Pecans, chopped

  • ¼ cup (approximately 8 small wrapped) Candy canes

Instructions
Prep Time: 25 minutes / Bake Time: 5 minutes / Yields: 16 servings
Step 1

Preheat oven to 350°F. Using the 1 tablespoon of softened butter, grease sheet pan. Line sheet pan with parchment paper. Place saltine crackers in rows to line the bottom of the prepared sheet pan. If there is any space in the pan, ensure the crackers are touching and any space should be around the sides of the pan. Set pan aside. 

Step 2

To make the candy topping, in a medium-sized saucepan, melt the butter. Add the brown sugar and with a rubber spatula, stir to incorporate ingredients. Once the mixture comes to a boil, boil for approximately 3 minutes. 

Step: 3

Once the mixture has boiled for a few minutes, immediately and carefully pour over the saltine crackers; the candy will self-level so there is no need to spread out. Place pan in the oven and bake for 5 minutes. After the 5 minutes, remove the pan from the oven and set aside. Immediately sprinkle the chocolate chips over the candy and let sit for a few minutes to melt the chocolate. 

Step: 4

When the chocolate has started to melt and can be spread, using an off-set spatula, spread chocolate evenly over the candy. Set pan aside on a cooling rack to let the chocolate set. 

Step 5

While the chocolate is setting up, place the chopped pecans on another sheet pan and bake for 10 minutes to toast pecans. Once toasted, set pan aside to cool until ready to top candy. While pecans are in the oven, if topping with optional peppermint candy canes, unwrap candy canes and place in a plastic storage bag. Using a rolling pin, break candy canes into small pieces. Once candy canes are crushed, pour into a small bowl for decorating. 

Step 6

When the chocolate has partially set, sprinkle the chopped pecans or crushed candy canes over top of the chocolate. Set the pan aside to let the chocolate harden completely. 

Step 7

To serve, cut or break into pieces.
