Ingredients
  • 1 (12-oz.) package thick-cut bacon

  • 1/3 cup C&H® Light Brown Sugar 
  • 2 teaspoons minced fresh rosemary
  • 1 (17.3-oz.) package (2 sheets) frozen puff pastry, thawed but cold
  • 1 (8-oz.) wheel Brie cheese, cold
  • 1/4 cup roasted, salted pistachios, chopped

Prep Time: 20 minutes / Cook Time: 35 minutes / Yields: 12 servings
Step 1

Preheat the oven to 375°F. Line a baking sheet with parchment paper then place an oven-proof wire rack on top of the paper.

Step 2

In a small bowl, stir together the brown sugar and rosemary.

Step 3

Arrange the strips of bacon on the wire rack then sprinkle them generously with the brown sugar mixture.

Step 4

Bake the bacon until it’s crispy and all of the fat has rendered, 20 to 25 minutes. Remove the bacon from the oven. Let it cool for 10 minutes then transfer it to a cutting board to cool completely. Once it has cooled, cut it into bite-sized pieces.

Step 5

Increase the oven temperature to 400°F.

Step 6

Unfold each sheet of puff pastry and cut it into 9 squares. Add a puff pastry square to each muffin tin cup, pressing it firmly into the bottom and sides so that the edges hang over the sides of each cup. (You will have six extra squares, which can be re-frozen.)

Step 7

Cut the wheel of Brie into 12 equal pieces. Place a piece of Brie in each puff pastry cup then top each piece of cheese with 1 teaspoon apricot jam.

Step 8

Bake the Brie cups until the puff pastry is golden brown and the cheese is melted, about 10 minutes.

Step 9

Remove the muffin pan from the oven and let the Brie cups cool for 10 minutes before topping them with the candied bacon pieces and chopped pistachios. Serve warm or at room temp.
