Instructions

Prep Time: 15 minutes / Bake Time: 35 minutes / Yields: 16 bars

Step 1

Preheat oven to 350°F. Grease and line with parchment paper one 8x8-inch baking pan.

Step 2

In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.

Step 3

In a large bowl, using an electric mixer, beat the butter and sugar until light and fluffy, about 3-4 minutes. Add applesauce, egg, and vanilla and mix until combined. Scrape sides of the bowl as needed. The mixture may look a little curdled at this point. Add the flour mixture and beat until just combined. Add shredded apples, oats, and pecans. Using a spatula, mix until well combined.

Step 4

Pour the batter into the prepared pan. Bake for 30-35 minutes or until golden brown and a toothpick comes out clean when inserted in the middle of the pan. Remove from the oven and allow the bars to cool down in the pan for 15 minutes. Remove from pan and cut into 16 bars.

Step 5

Prepare the icing by mixing the brown sugar and milk until all the sugar is dissolved. Add powdered sugar, cinnamon, and nutmeg and combine until smooth. Using a spoon, drizzle icing on top of the bars.
